What is Prima Pave's story?
Prima Pavé is Italy’s most awarded non-alcoholic wine, having garnered five medals between the International Wine & Spirits Competition and the San Francisco International Wine Competition in 2022, inclusive of a 94 point score for the Rosé Brut, among the highest in the history of the competition for a non-alcoholic rosé. Prima Pavé is proud to be a woman founded and woman owned business. When Dejou Marano, a Certified Specialist of Wine and hospitality entrepreneur became pregnant with her first child, she searched for an alcohol-free wine festive enough to toast this significant moment in her life, but soon realized there were few options offering sophistication, complexity and food-friendly flavors. With brilliant bubbles in mind, Dejou partnered with an energetic and progressive winemaker in Northern Italy to develop an exceptional alcohol-free sparkling collection. Dejou’s husband Marco, whose family that has been growing grapes and making wine in the Campania region of Southern Italy for over 75 years, works alongside her. Each of Prima Pavé’s 0.0% abv sparkling expressions are crafted to be fine wines first and foremost, elegantly expressing the Italian terroirs of Friuli and Abruzzo. The winemaking process begins by harvesting sustainably farmed Pinot Grigio, Gewürztraminer and Sauvignon Blanc grapes in Friuli and Montepulciano in Abruzzo. From these high quality grapes three rare wine blends are created, each crafted by traditional winemaking methods inclusive of fully realized grape fermentation. Each wines is then dealcoholized through a low-intervention proprietary filtration system. This low and slow dealcoholizing process takes place over a series of weeks to preserve the texture, mouthfeel, flavors and complexity of a fermented wine. Once each wines achieves 0.0% abv, with great care fine bubbles are added to be lively and persistent. Prima Pavé is proud to be on the menu of a number of awarded Michelin-starred and James Beard nominated restaurants including Eleven Madison Park, Daniel Boulud’s Le Pavilion, Gabriel Kreuther, Birch & Rye, Cassava, Che Fico, Georgia Boy and Southern Belle, as well as World’s 50 Best Bars, Mace and Dear Irving in NYC.
